fifth crow farm Dutch Beet Salad
6 large beets, peeled 1 bunch scallions, chopped 1/2 cup apple cider vinegar 2 T water 1/2 cup oil pinch sugar 1/4 t salt 1/4 t black pepper
Grate the fresh beets on the finest grater you have or use the food processor blade with the smallest holes. Place the grated beets into a bowl. Add the remaining ingredients and stir until well combined. Marinate in the refrigerator for several hours before serving. Serves 4-6
For a little variety substitute grated carrots, turnips or daikon radishes for 1/3 of the beets.

Teresa Kurtak 1 bunch of curly or lacinato kale, chopped or torn into bit size pieces
1 medium sized red onion diced (sometimes i like to slice it in slivers too just for the aesthetic)
1/4 cup of sesame seeds, or sunflower seeds or a mixture of both (I prefer to buy them raw and toast them in a cast iron skillet fresh before use)
juice of 1 very large lemon or a couple smaller ones
several tablespoons of olive oil
Braggs Liquid Amino Acids (or soy sauce) to taste
a little sesame oil is also a nice addition.
This recipe is so simple and flexible. I chop up the kale & onions and put them in a bowl, pour in the olive oil & lemon juice... and then toss it together. Sometimes (after careful handwashing) I used my hands to sort of massage the oil & lemon juice into the kale. Then... sprinkle on Braggs and toss in the toasted sesame/sunflower seeds, taste, and voila! The acids sort of cook/pickle the onions and kale and it tastes better after it sits for a couple hours- makes great leftovers for lunch the next day.

Teresa Kurtak extremely simple and yet quite beautiful and delicious way to serve kohlrabi. Thanks Annie Izaki for introducing us to this recipe.
1-2 bunches of kohlrabi
juice of 1 lemon
2-3 Tbsps melted butter
black pepper & salt
1 bunch of parsley or dill
1. peel and halve or quarter depending on size, a bunch of kohlrabi.
2. boil till tender
3. drain and toss with 2-3 Tbsps of melted butter, the juice of 1 lemon, and diced parsley or dill.
4. salt & pepper to taste.
