Apple Khoresht (apple & beef stew)

This is a Kurtak family favorite that my parents picked up in Iran. The dish can be made with apples or quince and is served with rice (tadik is even better).

Ingredients:

1-2 lbs of beef stew meat cut up in bite size cubes

3-6 apples- it’s really flexible. The more people I’m serving the more apples I add

2-3 medium yellow onions

1/4- 1/2 tsp of ground cinnamon

salt

black pepper

5 tbsp butter

juice of 2-3 lemons

Instructions:

First put a couple Tbsp of butter in a skillet. Sear the meat in the butter, remove from the pan and set aside. Next coarsely chop the onions. peel and slice the apples as if you were making apple pie (keep the slices under 1/2′ thick and of similar size so they cook evenly. Melt 2-3 more Tbsp of butter in the same pan that the beef was in. Add the onions and apples. Sautee till the onions are translucent and the apples are turning soft and starting to brown. Add the meat back in along with the cinnamon and a generous sprinkling of pepper. Cover in water and add the lemon juice. Continue to cook on low heat till apples are fully cooked. Salt to taste.
