1-2 cups diced/chopped tomatoes
1 cup diced onion
1-2 poblano peppers, charred and chopped
1 1/2 tsp minced garlic
3/4 cup chopped cilantro (slice it up stems and all)
4 tsp fresh lime juice
1/2 tsp sea salt
1/8-1/4 tsp chipotle chili powder
2-3 tbsp olive oil
optional: 1 jalapeno, diced

Char the peppers on a grill or in the broiler. Put them in a zip lock bag for about 15 minutes. Take them out, peel them and chop them. Combine all the ingredients in a bowl and serve with your favorite chips or in tacos, whatever!
