Balsamic Roasted Beets with Cauliflower

1 bunch beets, diced
1 medium head cauliflower, cut into small florets
2-3 shallots cut into wedges
1/4 cup olive oil
1/4 cup balsamic vinegar
Salt and pepper
Fresh thyme and rosemary (or whatever you’ve got lying around)

Combine everything in a large bowl, mixing to ensure everything’s pretty well coated.

Place in a large baking dish, and bake for 50-60 minutes at 375 F, testing for tenderness and adjusting cook time accordingly.
