Also known as Hakurai Turnips or Japanese Salad Turnips, these are very versatile. They’re great raw as a snack or on salads, steamed, roasted or in a stir fry. Tokyo turnips are surprisingly sweet and juicy when cooked. The greens are great for sautéing also. If you don’t plan on using the turnips right away, as with beets, cut off the tops and store each in separate bags in the fridge. They’ll keep much longer without the tops. Some folks store root veggies like turnips, radishes and carrots in an open tupperware filled with water in the fridge. Keeps them crispy – just don’t wait too long.
