One of my favorite recipes is very easy- makes a great side dish if you’re serving an Indian meal. Dice up a small onion, or half a larger one. Dice the beans into small pieces the size of peas. Heat up a pan, add some cooking oil and a heaping teaspoon of mustard seeds. Wait till they start to pop. Add the onion and fry till they get soft and translucent. Throw in the diced beans, stir, cover. In a separate hot skillet, add a couple tablespoons of finely dessicated coconut (NOT SWEETENED). Stir till it starts to turn toasty brown. Shut of heat and add to the beans (usually right when they’re almost done). Stir and keep cooking till tender. Salt to taste.
